Eric makes these, and they are the best scones ever. No, I'm not biased, why do you ask?
2 cups all-purpose flour
1/3 cup plus 1 tsp sugar
1 tsp baking powder
0.25 tsp baking soda
0.5 tsp salt
8 tbsp butter, frozen and cut into pieces
0.5 c raisins or dried currants or dried cranberries
0.5 c sour cream
1 large egg
Set oven rack to middle position and preheat to 400°.
Mix flour, 1/3 cup sugar, baking soda, baking powder and salt. Grate butter into the flour mixture and work in with your fingers. Stir in raisins/currants/cranberries.
Whisk together egg and sour cream until smooth.
Using a fork, stir together the sour cream mixture with the flour mixture until large dough clumps form. Press together with your hands to form a ball.
Place on a lightly floured surface and pat into a 7 to 8 inch circle. Sprinkle with 1 tsp sugar. Use a sharp knife to cut into 8 triangles.
Place on a lined cookie sheet about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes then serve.
